Soup with Sea Cucumber and Pork Recipes

Ingredients :

450g soaked sea cucumber

450g shin of pork

19g dried yam

300g carrot

2 slices ginger

1/3 dried tangerine peel

8 cups or suitable amount of water

Method :

  1. Gut sea cucumber. Wash. Scald in hot boiling water with ginger and spring onion. Rinse with water.

  2. Scald shin of pork and rinse with water. Wash dried yam. Peel carrot and cut into large pieces. Soak dried tangerine peel until it becomes tender. Remove pith.

  3. Bring 8 cups or suitable amount of water with dried tangerine peel to the boil. Put in all ingredients and cook for 10 minutes. Then turn to low heat and cook for 2 hours. Remove sea cucumber when it becomes tender. Season with pinch of salt.

Serves 2 - 4
