Method :
Wash
dried oysters. Soak for 1 hour. Remove and set water aside. Heat wok.
Sauté ginger and spring onions with 2 tbsp of oil until fragrant.
Add dried oysters. Sauté for a while. Sizzle wine. Add seasoning and
simmer until dried oysters are thoroughly tender. Discard spring
onions and ginger. Wash
mushrooms. Soak and trim. Stir in steaming ingredients and steam for
10 minutes.
Put
mushrooms in casserole. Arrange dried oysters and then mushrooms on
top. Add the remaining ingredients to the center. Pour on simmering
liquid from dried oysters. Steam for 10 minutes. Drain off steaming
liquid. Turn contents upside down onto plate. Blanch
broccoli in oil and salt water. Arrange around the edge of plate.
Bring steaming liquid and sauce to the boil. Pour onto plate. Serve.
