Method :

Wash
winter melon with peel. Remove pith and cut into large pieces.

Wash
duck. Remove the bottom and fat. Wipe dry. Apply white wine on the
cavity of the duck.

Scald
shin of pork. Rinse with water. Wash dried scallops. Soak dried
tangerine peel and remove pith.

Put all
the ingredients into a stewing pot. Pour in 4 cups of boiling water.
Cover with lid. Then stew over high heat for 1 hour. Turn to low
heat and stew for 2 hours. Season with salt. Serve with stewing pot
while hot.
