Stewed Shark's Fin with Salted Pork Trotter and Chicken Recipes
Ingredients :
225g
soaked shark's fin
113g
salted pork trotter
1/2 slim
chicken
2 slices
ginger
Chinese
parsley
1 tbsp
Shaoxing wine
1 small
dish Zhejiang vinegar
Method :
Scald the shark's fin with ginger,
spring onion and Shaoxing wine.
Set aside.
Skin, rinse and scald the chicken.
Skin, scald and dice salted pork
trotter.
Arrange chicken, salted pork
trotter, shark's fin and ginger slices into a stewing pot.
Put in 4 cups of boiling water.
Stew over high heat for 1/2 hour.
Reduce to low heat and cook for 3
hours.
Discard ginger slices.
Season with salt.
Serve with Chinese parsley and red
vinegar.
Pork trotters can be bought in grocery
stores. To avoid shark's fins sticking on the bottom of the pot, put a
piece of bamboo mat at the bottom when cooking.
