Stir Fried Ginkgo with Assortment Recipes

Ingredients :

38g ginkgoes

5 dried black mushrooms

5 water chestnuts

1 tomato

75g honey peas

2 tbsp soaked black fungi

2 tbsp soaked white fungi

2 tbsp deep fried cashew nuts

2 cups of stock

2 slices ginger

Sauce

1/3 tsp salt

1/2 tsp granulated sugar

1 tsp light soy sauce

3/4 tsp caltrop starch

3 tbsp stock

1/2 tsp sesame oil

Method :

  1. Shell ginkgoes. Soak in water for a while. Remove membrane. Halve and remove stalks. Soak mushrooms until they become tender and cut into slant slices. Peel water chestnuts and cut into thick slices. Wash black fungi and white fungi. Remove the tough strings from honey peas.

  2. Bring 2 cups of stock to the boil. Scald ingredients of (1). Remove and drain.

  3. Remove seeds from tomato and cut into pieces.

  4. Heat 2 tbsp of oil. Sauté ginger slices. Add all the ingredients and stir fry for a while. Then add sauce and tomato. Stir fry and dish up. Put deep fried cashew nuts on top.

Serves 2 - 4
