Stir Fried Glutinous Rice Recipes

Ingredients :

600g glutinous rice

two dried pork sausages

two dried liver sausages

75g dried pork belly

38g dried shrimps

4 dried black mushrooms

1 egg

1 sprig Chinese parsley, chopped

2 sprig Chinese parsley, chopped

2 sprigs spring onion, diced

2 tbsp deep fried peanuts

1/2 tbsp wine

Seasoning

1 tbsp light soy sauce

1/2 tbsp dark soy sauce

1 tsp granulated sugar

Method :
  1. Wash glutinous rice. Soak in water for 3 hour. Drain.

  2. Wash dried sausages and dried pork belly with hot water. Then dice. Wash dried shrimps and soak in water for 30 minutes. Drain. Soak black mushrooms in water until they become tender. Steam until they are cooked. Dice. Heat wok with 1 tbsp of oil. Saute dried shrimps, dried sausages, dried pork belly and black mushrooms. Then sizzle wine. Dish up and set aside.

  3. Whisk egg. Fry the egg mixture to form into egg sheet. Cut into thin shreds.

  4. Heat wok. Add oil and sway the wok. Remove extra oil. Then add small amount of oil. Add glutinous rice and stir well. Pour in some oil and water when stir frying glutinous rice. Cover with lid for a while (using low heat). Repeat the above step until glutinous rice is cooked. Then add dried sausages and dried pork belly. Stir well. Add seasoning, dried shrimps, mushrooms, spring onion dices, Chinese parsley, egg shreds and peanuts. Mix well. Serve hot.
