Stir Fried Shanghai New Year Pudding with Shrimps Recipes

Ingredients :

150g fresh shelled shrimps

6 rolls Shanghai New Year pudding

75g potherb mustard

1 slice ginger, shredded

1 shallots, sliced

chili shreds

Marinade

1/6 tsp salt

1/2 tsp caltrop starch

dash of sesame oil

pinch of pepper

Seasoning

1/4 tsp salt

1/3 tsp granulated sugar

3 tbsp stock

dash of sesame oil

Method :

  1. Rub shelled shrimps with salt. Wash and wipe dry. Add marinade and marinate for 20 minutes. Deep fry in warm oil.

  2. Cut away head and end from potherb mustard. Wash and squeeze out water. Dice.

  3. Soak pudding in water until they become tender. Cut into slant pieces.

  4. Heat 2 tbsp of oil. Sauté ginger shreds, shallot and potherb mustard. Add pudding. Stir fry over low heat until the ingredients become tender (add seasoning when stir frying). Then add fresh shrimps and chili. Stir well. Dish up.

Serves 2 - 4
