Giblet Gravy for Roasted Turkey Recipes

Ingredients :

turkey giblets and neck

2 liters chicken stock

1 liter of turkey juice (from the roasting pan)

1 onion, quartered

1 medium carrot, quartered

2 ribs celery, with leaves

salt and pepper to taste

50gm flour

2 hard cooked eggs, sliced or chopped

10gm chopped parsley

10gm chopped garlic

20gm chopped shallot

50gm unsalted butter

Method :
  1. Place the liver in a small bowl and keep it refrigerated.

  2. Cover the neck and remaining giblets with chicken stock in a pot.

  3. Add onion, carrot, celery, salt and pepper.

  4. Simmer with lid for 1 hour.

  5. Add liver and cook for 15 minutes, add in turkey juice and stir to blend.

  6. Reduce heat.

  7. Make a paste from flour with water until it's very smooth.

  8. Add the above to gravy mixture and continue to cook slowly until slightly thickened, remove the giblets and chop to pieces.

  9. Add gravy and eggs, adjust seasoning.
