Giblet Gravy for Roasted Turkey

Ingredients : |
|
turkey giblets and neck
2 liters
chicken stock
1 liter of turkey juice (from the roasting
pan)
1 onion, quartered
1 medium carrot, quartered
2 ribs celery, with leaves
salt and pepper to taste
50gm flour
2 hard cooked eggs, sliced or chopped
10gm chopped parsley
10gm chopped garlic
20gm chopped shallot
50gm unsalted butter |
Method :

Place the
liver in a small bowl and keep it refrigerated.

Cover the
neck and remaining giblets with chicken stock in a pot.

Add
onion, carrot, celery, salt and pepper.

Simmer
with lid for 1 hour.

Add liver
and cook for 15 minutes, add in turkey juice and stir to blend.

Reduce
heat.

Make a
paste from flour with water until it's very smooth.
-
Add the
above to gravy mixture and continue to cook slowly until slightly
thickened, remove the giblets and chop to pieces.

Add gravy
and eggs, adjust seasoning.
