Ingredients :

1/4 cucumber

pinch of salt

1 medium tomato

1 small onion

200g low fat natural yoghurt


1/4 tsp minced garlic

3-4 drops tabasco sauce

Method :

Peel and chop the cucumber. Sprinkle with salt. Place in sieve over bowl and allow to drain for 30 minutes. Chop tomato and place in the second bowl. Slice onion very finely. Mix tomato, onion and cucumber. Mix yoghurt, pepper, garlic and tabasco or chili sauce. Pour yoghurt mixture over vegetables, mix well and refrigerate for an hour.

Serves 4 - 6
