Drunken Duck Breast with Liver Paste Recipes

Ingredients :

1 (300g) duck breast

2 tbsp coarse salt

3/4 cup Shaoxing wine

12 slices goose liver paste

Method :

Steam duck breast for 25 minutes until done. Let it cool off for a while. Strain the liquid from steaming duck. Save for later use. Rub duck breast with salt and leave it for an hour. Mix liquid from steaming duck with Shaoxing wine. Soak the duck breast in the liquid overnight. Slice duck breast and goose liver paste thinly. Arrange on a plate and pour some of the liquid used to marinate duck breast on top before serving. Soak the duck breast in the liquid overnight will give the best texture and taste. Over soaking may strengthen the taste of Shaoxing wine in the duck, but would also make the meat tough.
