Duck Feet Marinated in Vinegar Recipes

Ingredients :

12 boned duck feet

1 tbsp white vinegar

1 slice ginger

1 sprig spring onion

50g carrot

50g cucumber

1 tsp roasted sesame seeds

Vinegar Marinade

1 cup white vinegar

1/2 cup sugar

1/2 tsp salt

Method :

Blanch duck feet in boiling water with white vinegar, ginger and spring onion for 5 minutes until cooked. Rinse the duck feet under running water for 20 minutes. Drain well. Bring vinegar to the boil. Dissolve sugar and salt in vinegar. Let it to cool off completely. Add duck feet in vinegar marinade and soak for 1 day. Dice carrot and cucumber. Sprinkle out excess water. Soak in vinegar marinade for 1 day. Drain duck feet, pickled carrot and cucumber. Serve cold with roasted sesame seeds on the side. Rinsing blanched duck feet under running water can give a more crunchy texture.
