Lemon Duck Recipes

Ingredients :

1/2 young duck (about 1kg), cleaned, deboned and cut into 2 pcs

1 eggs, beaten

5 tbsp cornflour

8 tbsp oil

Marinade for duck (mixed) :

1/4 tsp meat tenderizer

1/4 tsp bicarbonate of soda

1/4 tsp salt

1/2 tsp soy sauce

1 tbsp custard powder

1 tbsp rosewine

1/4 tsp pepper

1.5 tbsp water

Lemon sauce (mixed) :

1 tbsp oil

4 tbsp lemon juice (from 1-2 lemons)

3 tbsp sugar or to taste

1/2 tbsp custard powder

1/4 tsp salt or to taste

1/2 tsp sesame oil

1 tsp cornflour

9 tbsp water

Method :

Mix duck pieces with marinade and leave for about 30 minutes. Dip in beaten egg and coat with cornflour. Heat browning dish in the microwave oven for 6 minutes. Add oil, arrange duck pieces on top and microwave on High for 5 minutes till golden brown. Turn duck pieces and microwave on High for another 4 minutes. Remove and keep aside. Put lemon sauce mixture in a small casserole and microwave on High for 90 seconds till boiling and thickened slightly. Mix thoroughly. Cut duck into pieces and pour lemon sauce on top. Serve hot.
