Season chicken with salt, pepper, soy sauce, wine and
salt. Leave aside for half an hour. Heat oil in a deep saucepan and fry the onions till fragrant
then add cloves, black peppercorns, cinnamon stick and star anise,
and fry well. Add in chicken pieces and stir fry over high heat till meat
changes color. Then add the potatoes and carrot and continue frying. Add enough water to cover chicken and cook on low heat until
vegetables and chicken are tender. Add in peas and cook for a further two minutes. Dish out and serve hot.
