Crab Cutlets Cooking Recipes

Ingredients :

120 g

Batter :

30 g

30 g

cooked crab meat

cream

lemon juice

egg yolk

salt and pepper to taste

egg and breadcrumbs

 

Mix to form a thick batter

butter

flour

milk to bind

Method :
  1. Remove any shells from the crab meat then mix with butter.
  2. In a bowl add the crab meat, the batter, lemon juice, egg yolk, salt and pepper.
  3. Pour into a saucepan and heat till mixture binds.
  4. Add the cream and mix well.
  5. Turn out mixture onto a damp plate and leave until cold.
  6. Form into cutlets, dip in egg and rub in breadcrumbs.
  7. Fry in deep fat till golden.
  8. Arrange on a bed of lettuce and serve with chili sauce.
