large chicken, cut into pieces

shallots, grind

large onions, quartered

fresh red chilies, slit lengthwise

potatoes, quartered

cucumber, deseeded then cut into 5 cm lengths

vinegar

oil

salt to taste

 

 

pod garlic

candlenuts

dried chilies

stalks lemon grass

piece galangal

mustard seeds

turmeric powder

piece ginger, shredded

Method :
  1. Heat oil in a pan and fry the shredded ginger till brown.
  2. Add ground ingredients (A) and fry till brown and crispy.
  3. Add shallots and fry for 2 minutes.
  4. Add chicken and mix well, then add enough water to cook chicken, and let it simmer on medium heat till tender.
  5. Add quartered onions, potatoes, salt, vinegar, fresh chilies and cucumber, and cook over low heat till potatoes are soft.

Serves 6 - 8
