Ingredients :

1 tsp

boiled eggs

butter

pepper and mustard to taste

Method :
  1. Cut the egg in half and scoop out the yolks.
  2. Rub yolks into a paste with a little butter seasoned with pepper and mustard but this paste must not be too moist.
  3. Fill in the egg whites and sprinkle paprika liberally before serving.

Serves 4 - 6
