Baked Snapper with Pineapple Seasoning Recipe

Ingredients :

cracked wheat

whole snapper

unsweetened pineapple pieces, reserve juice

spring onions, chopped

red capsicum, chopped

wheat germ

egg

chicken stock

corn flour

soy sauce

reserved pineapple juice

oil, for brushing fish

Method :
  1. Soak cracked wheat in boiling water for 20 minutes, strain, drain well.

  2. Wash fish under cold water, pay dry with absorbent paper.

  3. In a medium bowl, combine wheat, half the pineapple pieces, half the spring onions, half the capsicum, wheat germ and egg, mix well.

  4. Fill the cavity of fish with the pineapple mixture.

  5. Place fish on a greased oven tray, brush with oil and bake 180C for 30 minutes.

  6. In a small saucepan, combine chicken stock, corn flour, soy sauce and pineapple juice.

  7. Stir sauce over a low heat until mixture boils and thickens, add remaining pineapple pieces, spring onions and capsicum, serve over fish.
