Cod a la Portuguese Recipes

Ingredients :

2 halibut steaks, about 12oz (350g) each

1/2 tsp salt

1/8 tsp pepper

1 tsp lemon juice

3 tbsp olive oil

2 large tomatoes, peeled and chopped

1 medium onion, chopped

1 clove garlic, crushed

1/2 tsp salt

1 tsp sugar

1/4 cup chopped parsley

3 tbsp tomato paste

1/4 cup sherry

1/2 cup water

1/4 tsp dried mint

4 sliced lemon

1 tbsp butter

hot cooked rice

Method :

Thaw fish just until fillets can be separated. Heat oven to 500F (260C). Lightly grease large baking dish with corn oil. Combine tomatoes, onion, green pepper, salt, pepper, herbs and 1/4 cup (60ml) corn oil in bowl. Lay fish fillets in baking dish in a single layer if possible. Spread with tomato mixture. Bake 10-15 minutes or until fish flakes easily with a fork. Serve immediately.
