Fish in Beer Batter Recipe

Fish in Beer Batter Recipes

Ingredients :

2lb fresh or frozen fish fillets (haddock or cod)

oil for deep frying

lemon juice

1 cup sifted all-purpose flour

1 tsp salt

1 tbsp paprika

12-oz bottle beer

flour

Method :

If using frozen fish, thaw fish until flakes can be separated easily. Heat oil to 400F (205C) in deep saucepan or electric deep fryer. Fill pan about 1/3 full of oil. Cut fish into serving-size pieces. Sprinkle lightly with lemon juice. Sift 1 cup (250ml) flour, salt and paprika into mixing bowl. Add beer gradually, beating until batter is smooth. Put a little flour in a flat dish and dip the fish fillets in it to coat both sides. Then draw each piece of fish through the beer mixture to coat well with batter. Fry in hot oil about 4 minutes, turning once. Batter should be dark golden brown and crisp and fish should be cooked through. Drain on paper toweling. Serve very hot.

Serves 4-6
