Fresh Tuna with Anchovies and Mushrooms Recipes

Ingredients :

4-6 tbsp oil

2-3 garlic cloves, crushed

1 large onion, finely chopped

5 oz button mushrooms, quartered or thickly sliced

6-8 anchovy fillets, chopped

2 tbsp chopped parsley

1 tbsp plain flour

10 fl oz dry white wine

pinch of nutmeg

6 oz tuna steaks, 1/2 inch thick

Method :
  1. Heat the oil in a pan, add the garlic and onion and fry over a low heat until soft and lightly browned.

  2. Add the mushrooms and cook for 2-3 minutes, then add the anchovies, parsley and flour.

  3. Mix together well.

  4. Stir in the wine, bring to the boil, stirring constantly, then simmer gently for 5-7 minutes.

  5. Season to taste with pepper and a pinch of nutmeg.

  6. There should be no need to add salt because the anchovies are salty.

  7. Place the tuna steaks in an oven-to-table dish and pour over the sauce.

  8. Cover with a lid or foil and cook in a preheated oven, 375F gas mark 5, for 40-45 minutes.

  9. Serve hot.
