Raw Fish Salad Cooking Recipes

Ingredients :

whiting fillets, skin removed

freshly squeezed lemon juice

white wine vinegar

white wine

cloves garlic, crushed

large carrots, cut into strips

asparagus, cut into 3cm lengths

red capsicum, seeded and chopped

chopped parsley

Method :
  1. Cut fish into thin strips and marinate in combined lemon juice, vinegar, wine and garlic for 2 hours.

  2. Meanwhile, bring a large saucepan of water to the boil, add carrots, cook for 1 minute.

  3. Add asparagus and cook for 1 minute.

  4. Drain and refresh carrots and asparagus under cold water, drain.

  5. Remove fish from marinade, toss with the blanched carrots and asparagus, capsicum and parsley, and serve immediately.

Serves 4
