Salmon Parcels Recipes

Ingredients :

3/4 cup

1 tsp

4 sheets

1 piece

firmly packed coriander leaves and steam

diluted coconut milk

cloves chopped garlic

chopped ginger

ground coriander

ground cumin

filo pastry, trimmed to size

boneless salmon filet

melted butter for brushing

mango chutney to serve

Method :
  1. Preheat oven to 200oC .

  2. Blend first 6 ingredients together.

  3. Add salt to taste and marinade salmon in mixture for at least 2 hours.

  4. Brush a sheet of pastry with melted butter, place second sheet of pastry on top and repeat with the rest.

  5. Drain the salmon, place it on the pastry and wrap salmon into a parcel.

  6. Brush parcel with melted butter and bake till golden brown for about 20 minutes.

Serves 2
