Snapper Supreme Recipes

Ingredients :

1/2 smoked snapper

30g butter

2 tbsp wheat meal flour

1 tbsp pea flour

0.5 liter milk

1/2 tsp celery seeds

1/2 tsp turmeric

250g whole grain noodles

1 egg, hard boiled

Method :
  1. Put the fish into pieces with a fork, removing any bones.
  2. You should have at least 250g fish when you finish.
  3. Put to one side and make the sauce by melting the butter and stirring in the wheat meal and pea flour.
  4. Take off the heat while you mix the flours to a smooth paste and continue stirring all the time the milk is being poured in.
  5. Take care it does not burn or clump as it begins to thicken.
  6. Take off the heat, beat until smooth and add celery seeds and enough turmeric to flavor and color it to a creamy yellow.
  7. Mix in the fish flakes.
  8. Cook the noodles by putting them into rapidly boiling water and cooking for 12 minutes or less if it seems tender (but not soft).
  9. Remove and strain.
  10. Mince the egg.
  11. Serve the noodles onto plates, cover with fish and sauce and top with minced egg.
