Trout With Almonds Recipes

Ingredients :

4 medium trout, each about 12 or 350 g gutted and scaled

4 tbsp plain flour

1 tsp salt

125 g butter or margarine (or mixture)

3 tsp salad oil

125 g flaked almonds

lemon slices and parsley for garnishing

Method :
  1. Leave heads and tails on trout to prevent shrinkage.
  2. Wash and wipe dry.
  3. Coat with flour and salt mixture.
  4. Heat 75 g butter or margarine and the salad oil in a large frying pan.
  5. Add trout, two at a time, and fry until cooked through and golden; 5 to 6 minutes per side.
  6. Turn twice.
  7. Drain on crumpled kitchen paper.
  8. Repeat with remaining trout.
  9. Add last 25 g butter to pan.
  10. Add almonds and fry gently until golden.
  11. Arrange trout and 4 warm plates.
  12. Coat each with hot butter or margarine mixture and the almonds.
  13. Garnish with lemon and parsley and serve straight away.

Serves 4 - 6
