Tuna Cabbage Rolls in Mushrooms Recipes

Ingredients :

1/4 cup corn oil, divided

1/4 cup chopped white onions

1 tsp ginger strips

2 tbsp chopped Chinese sausage

1/2 cup julienne carrots

2 180g cans reduced-fat, reduced-salt tuna flakes, drained

1/2 tsp salt

1/8 tsp ground black pepper

1/4 tsp seasoning powder

6-8 large cabbage leaves, blanched, tough veins trimmed

6-8 spring onions, blanched

Sauce:

2 tsp minced garlic

1/4 cup quartered button mushrooms

1/4 cup halved straw mushrooms

3 dried shiitake mushrooms, soaked then sliced

1.25 tbsp oyster sauce

2 tsp soy sauce

2 tsp sesame oil

2 tbsp rice wine

1 tbsp sugar

1.5 tbsp cornstarch

1 cup water

Coriander leaves for garnishing

Method :

Heat 2 tbsp corn oil. Sauté onion, ginger and Chinese sausage until aromatic. Add carrots and tuna. Season with salt, pepper and seasoning. Cook for 1 minute then set aside. Place 1 tbsp of tuna mixture on cabbage leaf. Roll up and tie with spring onion. Repeat procedure using remaining cabbage and tuna mixture. Set aside. In a large pan, heat remaining oil and sauté together garlic and mushrooms. Mix oyster sauce, soy sauce, sesame oil, rice wine, sugar, cornstarch and water in a bowl, then pour over garlic and mushroom. Simmer until thickened. Place cabbage rolls in sauce. Cover and cook over medium heat for about 5 minutes. Garnish with coriander leaves.
