Tunisian Grilled Sardines with Tomato Relish Recipes

Ingredients :

16 fresh sardines, scaled, cleaned and gutted

coriander sprigs, to garnish (optional)

Marinade:

1 garlic clove

2 tsp coriander seeds, toasted

1 dried red chili, deseeded and chopped

finely grated rind and juice of 1 lime

4 tbsp virgin olive oil

salt

Tomato relish:

4 spring onions, white part only, chopped

2 tbsp lime juice

250g well-flavored tomatoes, skinned, deseeded and chopped

1/2 sun-dried tomato, chopped

1/2 dried red chili, deseeded and chopped

3 tbsp chopped coriander leaves

Method :
  1. Wash the fish thoroughly, pat dry with kitchen paper and place in a shallow non-metallic dish.
  2. To make the marinade: using a pestle and mortar pound together the garlic, coriander seeds and chil with a pinch of salt.
  3. Add the lime rind and juice, gradually work in the oil.
  4. Pour over the sardines, coat well with the mixture, cover and leave for 60 minutes, turning the sardines 2-3 times.
  5. Process all the relish ingredients in food processor.
  6. Place the sardines on a barbecue or under a hot grill and cook for 2-3 minutes on each side, basting with the marinade.
  7. Serve the sardines with the relish and garnish with coriander sprigs, if liked.
