Auvergne Rabbit Casserole (lapin à ľauvergnate) Recipes

Ingredients :

1.25lb hearted cabbage

salt

4oz bacon, in one piece

4 thin pork sausages

1oz butter

2 tbsp oil

1.5lb rabbit joints

1 big bouquet garni

6 small onions

pepper

Method :

Wash and cut the cabbage into quarters. Plunge into salted, boiling water, cook for 12 minutes, then remove and drain. Simmer the bacon in boiling water for 15 minutes, then drain and cut into dice. Grill or fry the sausages until they are browned all over. In a flameproof casserole melt the butter and oil and fry the bacon dice, then remove and fry the rabbit until lightly browned on all sides. Add the bouquet garni, cabbage, onions, peeled but whole, bacon dice and the sausages. Season with pepper only. Cover and cook very gently for 90 minutes. Before serving, remove the bouquet garni and check the seasoning.
