Baked Red Mullet with Basil (Rougets Au Basilic) Recipes

Ingredients :

4 red mullet, cleaned

90ml (6 tbsp) virgin olive oil

60ml (4 tbsp) lemon juice

2 garlic cloves, crushed

salt and freshly milled black pepper

8 slices of lemon

30ml (2 tbsp) chopped fresh basil

Method :

Take four pieces of foil, each large enough to enclose a fish. Brush the foil with some of the oil and place the mullet in the center. Mix the remaining oil, lemon juice, garlic and seasoning. Spoon this mixture over the fish and lay a couple of lemon slices on top of each fish.

Fold the sides of the foil up to enclose each fish in a neat package. Place these in a large oval gratin dish and bake at 180C (350F) mark 4 for 30 minutes. Open the foil packages and sprinkle the basil over the fish. Serve immediately, leaving each fish in its part-opened package.

Serves 4

Basil loses its flavor very quickly once it has been chopped, so it is important to chop it and sprinkle it over the fish just as it is being served.
