Goulash with Beer (goulache à la bière) Recipes

Ingredients :

1.5lb braising beef

5oz onions

1 tbsp lard

1 tbsp flour

1/2 tsp paprika

bouquet garni

2 cloves garlic

2 tbsp tomato puree

1/2 pint beer

salt, pepper

2 tsp sugar

Method :

Remove all fat from the meat and cut into 4-8 serving portions. Fry them with the sliced onions in the lard. Sprinkle the flour on top and turn until well browned. Add the paprika, bouquet garni, crushed garlic and tomato puree or tomatoes, peeled and de-seeded, and the beer. Season, add the sugar and cook, covered, either over a gentle heat for 2 hours or in a moderate oven (180C, 350F, Gas 4) for 105 minutes. Adjust the seasoning and remove the bouquet garni before serving.
