Leek Quiche (quiche de Saint-Quirin) Recipes

Ingredients :

5oz shortcrust pastry

1lb leeks (use white part only)

2 tbsp cornflour

5oz milk

2 eggs

2 tbsp cream

3oz grated hard cheese

salt, pepper

2oz lean, unsmoked bacon

Method :

Line an 7-in flan ring with the pastry. Wash the leeks and blanch them in boiling salted water for 5 minutes. Drain well and cut into rounds 1/2 in thick. Mix the corn flour with the milk and add the beaten eggs, cream, grated cheese, salt and a generous amount of black pepper. Fry the bacon lightly and cut into small dice. Cover the bottom of the flan with the bacon and leeks, spoon the egg mixture over and bake in a hot oven 200C, 400F, Gas 6 for 30 minutes. Serve hot or cold.
