15ml (1 tbsp) chopped fresh fennel or 10 ml
(2 tsp) chopped fresh tarragon
all the marinade ingredients together in a basin and whisk well. Place
fish in a gratin dish. Pour the marinade over and cover. Leave for 30
minutes to 4 hours turning two or three time.
Note - This marinade may be used for
chicken or veal but is most suitable for fish. Fish that has been
marinated for as little as 30 minutes prior to grilling, remains moist
and full of flavor. This quantity of marinade is sufficient for 6
fillets of flat fish (sole or plaice) or 900g (2 lb) large fillets (cod
or haddock) or cutlets.
