Mayonnaise with Capers Gherkins
(mayonnaise verte) Recipes
Ingredients :
25g pickled gherkins
30ml capers
200ml mayonnaise
25g cooked spinach ground black pepper to
taste
Method :
Chop the
gherkins and capers together and mix into the mayonnaise. Liquidize or
mouli the spinach. Then, in a clean cloth, squeeze very dry. Add the
leaf pulp to the mayonnaise and mix in well. Season to taste.
Serve with
cold salmon, eggs or in an hors-d' oeuvre.
