Mixed Leaf Salad (Salade Melangee) Recipes

Ingredients :

2 heads of radicchio

1 head of curly endive

several leaves of rocket

fresh spinach leaves

few nasturtium leaves

chopped fresh herbs, such as chives, parsley, chervil

5ml (1 tsp) wholegrain mustard

2.5ml (1/2 tsp) sugar

1 garlic clove, crushed

15ml (1 tbsp) white wine vinegar

30ml (2 tbsp) olive oil

salt and freshly milled black pepper

Method :

Tear all the salad leaves into pieces approximately the same size, and mix together in a bowl with the herbs.

Combine the mustard, sugar, garlic, vinegar and oil in a screw-topped jar and shake well. Season to taste.

Just before serving, shake the dressing again and pour over the salad. Toss well.

Serves 4-6

Croutons make an excellent addition to this salad. Add crushed garlic when frying the cubes of bread.
