Ingredients :
4 oz butter
2 egg yolks
1.5 tbsp orange juice
a few drops lemon juice
grated rind of 1 orange
Make a hollandaise sauce substituting orange juice for lemon juice. When all the butter has been beaten in, adjust the flavor with a little lemon juice. Stir in the grated rind. Serve with asparagus or broccoli.
