Pimento and Garlic Sauce (Rouille) Recipes

Ingredients :

25g (1 oz) pimento, chopped

1 medium potato, peeled and boiled

4 garlic cloves, crushed

15ml (1 tbsp) basil or thyme

Tabasco sauce, to taste

150ml (1/4 pint) olive oil

salt and freshly milled black pepper

Method :

Pound the first five ingredients in a bowl to form a smooth paste. Gradually add the oil, beating the mixture all the time as for mayonnaise. Season to taste.

Alternatively, blend the first five ingredients into a paste in a food processor. Gradually add the oil while the machine is running to form a mayonnaise-like texture. Season to taste.

Makes about 300ml (1/2 pint)

This piquant, garlicky sauce is an essential accompaniment to Mixed Fish Soup (Bouillabaisse).
