Scrambled Eggs with Prawns (Oeufs Brouilles Aux Langoustines) Recipes

Ingredients :

50g (2 oz) butter

6 large prawns

3 eggs

salt and freshly milled black pepper

2.5ml (1/2 tsp) paprika

30ml (2 tbsp) double cream

Method :

Divide the butter and heat in two egg dishes. Lightly fry half the prawns in each dish. Lift out and keep hot.

Beat the eggs with the seasoning, paprika and double cream and lightly scramble in the two dishes. When cooked, mix in the prawns and serve immediately.

Serves 2

This quick and easy dish is perfect for lunch or supper.
