Steak with Garlic (steak à ľail) Recipes

Ingredients :

1lb frying steak

salt, pepper

2 cloves garlic

1 tbsp oil

1/2 oz butter

Method :

Divide the steak into 4 portions and trim off any excess fat. Beat with a meat hammer or the edge of a tea plate if necessary, and sprinkle with a little salt and pepper. Crush the garlic cloves and rub them all over the meat. Heat the oil and butter in a frying-pan and fry the steaks over a high heat, turning once. Serve at once.

Serves 4

Never turn meat with a fork or knife point when it is frying, since any break in the sealed skin will allow the juices to escape.
