Tomato Sauce (Sauce De Tomates) Recipes

Ingredients :

30ml (2 tbsp) olive oil

2 garlic cloves, crushed

1 onion, skinned and finely chopped

1 rasher streaky bacon, rinded and chopped

675g (1.5 lb) ripe tomatoes, skinned and chopped

salt and freshly milled black pepper

5ml (1 tsp) sugar

15ml (1 tbsp) strawberry or raspberry vinegar

15ml (1 tbsp) chopped fresh basil

salt and freshly milled black pepper

Method :

Heat the oil in a medium saucepan. Add the garlic, onion and bacon, and cook gently for 5 minutes, stirring occasionally. Stir in the tomatoes, seasoning, sugar, fruit vinegar and basil. Cover the saucepan and simmer the ingredients gently for 30 minutes, or until the tomatoes are pulpy.

Puree the sauce in a blender or food processor, then sieve it to remove all the tomato pips and pieces of skin. Reheat the sauce, taste and adjust the seasoning before serving either hot or cold.

Serves 4-6

It is important for this sauce to choose tomatoes which have a really good flavor or the end result will be insipid.
