Tomato Sauce (coulis des tomates) Recipes

Ingredients :

1lb tomatoes

1 small onion

2 cloves garlic

1 tbsp olive oil

bouquet garni

salt, pepper and sugar to taste

Method :

Roughly chop the tomatoes, onion and garlic. Cook in the olive oil with the bouquet garni over a very low heat for about 45 minutes, by which time the sauce should be very thick. Put through a sieve or mouli and season to taste with salt, black pepper and a little sugar.

Serves 4
