Tomato and Tarragon Soup - Soupe Aux Tomates Et A L'Estragon Recipes

Ingredients :

30ml (2 tbsp) virgin olive oil

1 medium onion, skinned and chopped

1 garlic clove, crushed

1 medium potato, peeled and sliced

675g (1.5 lb) ripe tomatoes, skinned and chopped

15ml (1 tbsp) chopped fresh tarragon

300ml (1/2 pint) chicken stock

salt and freshly milled black pepper

grated rind and juice of 1/2 orange

pinch of sugar (optional)

Method :

Heat the oil in a medium saucepan. Add the onion, garlic and potato and cook gently for 5 minutes.

Stir in the tomatoes and tarragon, making sure all the vegetables are well mixed, then pour in the stock. Add a little seasoning, cover and simmer gently for 20 minutes.

Puree the soup in a blender or food processor. Stir in the orange rind and juice, then taste and adjust the seasoning, adding the sugar if necessary. Chill the soup thoroughly before serving.

Serves 4-6

An excellent chilled soup for casual summer lunch parties and picnics.
