Caribbean Ham Loaf

Ingredients :

butter, melted

Demerara sugar

ground cloves

mustard powder

pineapple, peeled and cored

whole meal breadcrumbs

lean ham, minced

dried apricots, minced or finely chopped

eggs, beaten

ground coriander

milk

salt and pepper

Method :
  1. Brush 900 g loaf tin with the butter.

  2. Mix together the sugar, cloves and 1/2 teaspoon of the mustard powder and sprinkle on the butter.

  3. Halve the pineapple slices and arrange them in the base of the tin.

  4. Mix together the breadcrumbs, ham, apricots, eggs, coriander and milk and season well with salt and pepper.

  5. Press the mixture into the tin and cover foil.

  6. Place in a roasting pan with 2 inches (5 cm) of water.

  7. Bake in the oven at 350oF (180oC), Gas 4 for 11/4 hours.

  8. Remove the foil 30 minutes before the end of cooking time.

Serves 6-8

 

Note : Serve hot, perhaps with baked tomatoes and courgettes, or cold with rice and pineapple salad.
