Ham and Mushroom Soup Recipes

Ingredients :

450g the lower part of Chinese ham

19g mushrooms

600g winter melon

2 slices ginger

1 tsp wine

water

salt

Method :

Wash ham in boiled water. Cook in boiling water for 30 minutes. Remove and rinse. Discard water. Soak and trim mushrooms. Peel winter melon. Clean and cut into big chunks. Bring a suitable amount water to the boil. Put in ham, mushrooms, ginger and wine. Simmer for 1 1/2 hours. Then add winter melon. Cook for 30 minutes more. Season to taste with salt.

Serves 2 - 4
