Ingredients :

fresh white breadcrumbs

finely grated Parmesan cheese

chopped ham

capers, finely chopped

grated Swiss cheese

clove garlic, crushed

finely chopped parsley

olive oil

freshly ground black pepper, to taste

lemon juice

 

slices smoked ham

lettuce leaves

lemon juice

Method :
  1. Carefully remove stalks from mushrooms.

  2. Chop stalks finely, blend with filling ingredients except for seasoning, lemon juice and oil.

  3. Arrange mushroom cups in a buttered ovenproof dish.

  4. Season with a twist of pepper and a squeeze of lemon juice.

  5. Spoon filling evenly into cups, shaping a little.

  6. Sprinkle with olive oil.

  7. Bake in a hot oven 200C (400F) for 8 minutes.

  8. To prepare garnish: Cut ham into circles with a scone cutter.

  9. Heat lettuce with lemon juice very gently in a covered saucepan until it has wilted.

  10. Place a ham circle under each mushroom cup and serve on the bed of lettuce.
