Method :
- Sieve the flour, semolina, baking
powder, baking soda and salt into a bowl.
- Whisk the yoghurt and sugar
together, add to the flour, mix in cold water and knead.
- Cover the bowl and keep aside for
20 minutes.
- Add clarified butter to the dough
and knead to make a fine, soft dough.
- Cover and set aside for 30
minutes.
- Divide into 20 equal balls, roll
out each ball and pull gently from both ends to make an oval shape.
- Heat oil in a wok.
- Deep fry each bhatura until it is
golden brown on both sides.
- Serve hot.
