Bombay Chicken Masala Recipes

Ingredients :

2 tbsp vegetable oil

400g (13 oz) boneless, skinless chicken breast, cut into strips

250ml (8 fl oz) chicken stock

salt and pepper

 

Spice paste -

1 onion, roughly chopped

6 green chilies, deseeded and chopped

6 garlic cloves, chopped

2 tsp peeled and grated fresh root ginger

1 tbsp ground coriander

2 tsp ground cumin

large bunch of coriander leaves, roughly chopped

150ml (1/4 pint) water

Method :

Place the spice paste ingredients in a blender or food processor and blend to a fairly smooth paste. Set aside.

Heat the oil in a large nonstick frying pan and add the spice paste. Fry, stirring constantly, for 1 minute, then add the chicken. Fry, stirring, for 2-3 minutes, then add the stock. Mix well, cover and cook gently for 10-12 minutes, or until the chicken is tender. Season with salt and pepper and serve hot.

Serves 4

This is an excellent dish for a family supper or a mid-week meal with friends.
