Method :
Place the spice paste ingredients in a blender or food processor and blend
to a fairly smooth paste. Set aside.
Heat
the oil in a large nonstick frying pan and add the spice paste. Fry,
stirring constantly, for 1 minute, then add the chicken. Fry, stirring,
for 2-3 minutes, then add the stock. Mix well, cover and cook gently for
10-12 minutes, or until the chicken is tender. Season with salt and pepper
and serve hot.
Serves 4

supper or a mid-week meal with friends.
