Seafood and Mixed Vegetable Bonanza Cooking Recipes

cod fish, skinned, cut into cubes

shrimps, cooked

crab sticks, cut length ways

lemon juice

coriander powder

red chili, powder

cumin (jeera), ground

corn flour

oil

onions, chopped

onion seeds

French beans (2 x 1 cm)

sweet corn

ginger, shredded

green chilies, sliced

red chili powder

green coriander, chopped

salt to taste

Method :
  1. Mix together, the seafood in a bowl and keep aside.
  2. Sprinkle the lemon juice, ground coriander, chili powder, salt and cumin on the seafood and mix gently to coat evenly.
  3. Sprinkle corn flour and mix to coat the seafood thoroughly.
  4. Refrigerate for one hour.
  5. Heat oil (3/4 cup) in a wok.
  6. Add the chopped onions along with onion seeds and sauté until the onion is lightly browned.
  7. Stir in the french beans, sweet corn, ginger, salt, green chilies, red chili powder and chopped coriander.
  8. Stir fry for 7 - 10 minutes over moderate heat.
  9. Remove from heat and place on serving platter.
  10. Keep warm.
  11. Heat the remaining oil in a wok, fry the marinated seafood to a golden brown color in 2 - 3 batches.
  12. Remove and drain all excess oil.
  13. Place the seafood along side the prepared vegetables, garnish with lemon wedges and serve hot.
