Chicken and Corn Soup (Sop Ayam Jagung) Recipes

Ingredients :

2 tsp peanut oil, extra

6 cups chicken stock

3 cups shredded cooked chicken

400g can sweetcorn kernels, drained

2 tbsp sweet soy sauce

1-2 tsp sambal ulek

2 cups shredded English or Chinese spinach, washed and drained

salt to taste

 

Paste -

2 French shallots, chopped

2 cloves garlic

2 candle nuts

1 tsp terasi

2 tsp peanut oil

Method :

Crush or pound paste ingredients in a mortar with pestle or in a small food processor. Heat oil in a large saucepan. Add paste and cook for 1-2 minutes. Add stock, chicken, sweetcorn, kecap manis and sambal ulek. Bring to the boil and simmer over low heat for 5-10 minutes. Add spinach and cook for 1-2 minutes. Season with salt. Serve into 4 individual soup bowls.

Serves 4
