Corn Fritters Recipes

Ingredients :

2 shallots, sliced

1 garlic clove, chopped

1 tbsp cilantro, chopped

1.5 cup fresh corn kernels

1 egg

1/2 cup flour

1/4 tsp baking powder

1/2 tsp freshly ground cumin

3/4 tsp sea salt

1/4 cup corn oil for frying

Method :

In a food processor, make a paste with the onion, garlic, and cilantro. Add the corn and process very briefly just to soften kernels a little. Beat the egg lightly and add to the corn mixture. Sift the flour, baking powder, ground cumin, and salt into a bowl, add the corn mixture and stir thoroughly. If mixture is very thick, stir in one tablespoon of water at a time until mixture reaches a batter consistency. Heat oil in a large skillet, or electric fry pan at 360F. Using a quarter-cup measure, carefully pour batter into pan, frying until light brown on both sides. Serve hot with a sambal, or serve as a side dish.

Makes about 10 fritters
