Marinated Barbecue Seafood (Udang Cumi-Cumi Bakar) Recipes

Ingredients :

1/4 cup peanut oil

grated rind of 2 limes

1/3 cup lime juice

3 medium chilies, deseeded and finely chopped

3 cloves garlic, crushed

400g squid cut into pieces

16 large green prawns, shells removed

500g baby octopus, cleaned and trimmed

Method :

Combine oil, rind, lime juice, chilies and garlic in a shallow dish. Score the inside skin of squid diagonally in both directions. Thread prawns longways onto bamboo skewers and brush marinade over prawns. Add squid pieces and octopus and brush with marinade. Leave to marinate in a refrigerator for 30 minutes. Cook prawns, calamari and octopus on a barbecue plate or chargrill for 5-10 minutes or until cooked. Serve with side bowls of boiled rice.
