Pan-Fried Fish (Ikan Goreng) Recipes

Ingredients :

1 tbsp peanut oil

4 boneless fish fillets

1 cup coconut milk

1 tsp palm sugar or brown sugar

1 tbsp lemon juice

4 green shallots, sliced


Paste -

2 cloves garlic, chopped

2 tsp root ginger, chopped

1 stalk lemongrass, sliced

2 medium chilies, deseeded and sliced

2 candle nuts

1 tsp terasi

1 tsp ground coriander

2 tsp peanut oil

Method :

Grind or pound paste ingredients in a mortar with pestle or a food processor. Brush paste over fish fillets. Heat remaining oil in a large frying pan. Add fish fillets and cook for 1-2 minutes on each side. Add coconut milk, sugar and lemon juice and simmer for 2-3 minutes. Serve fish topped with green shallots.
